Arborio Rice with Mozzarella and Herbs

4 Servings

1 1/2 cups Arborio Rice

1/2 teaspoon salt

3 tablespoons olive oil

1 cup shredded smoked mozzarella cheese

1/4 cup finely chopped fresh basil

1/4 cup finely chopped parsley

Freshly ground black pepper to taste

1. Bring about 4 quarts of water to a boil. Add the rice and salt, stirring well. Boil, uncovered, about 15 minutes, stirring often, until just tender. Drain.

2. Toss the hot rice with the olive oil, mozzarella, basil, parsley and pepper. Serve immediately.
