Chocolate-Coconut Squares

 

1 cup golden brown sugar

1/2 cup butter or margarine, softened

1 cup plus 2 tablespoons flour

2 large eggs

1 teaspoon vanilla

1 cup coarsely chopped walnuts

1 cup flaked or shredded coconut

1 cup semisweet chocolate chips

1. Beat 1/2 cup brown sugar and butter. Mix in 1 cup flour. (Mixture will be crumbly).

2. Press dough in bottom of an 8 inch square glass baking dish. Bake at 400 degrees for 10-12 minutes until crust looks dry. Remove from oven. Reduce oven temp to 350 degrees.

3. Lightly beat eggs; mix in remaining ingredients, remaining 1/2 cup sugar and 2 tablespoons flour. Spread over crust.

4. Bake 25 to 30 minutes until topping is set and pick inserted in center comes out clean.

5. Cool in pan on rack.
