French Muffins

3 1/4 cups flour

1 1/4 cups sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 teaspoon nutmeg

2 eggs

2/3 cup melted butter

1 cup milk

For the topping:

2 tablespoons cinnamon

2/3 cup sugar

1/3 cup melted butter

1. Preheat oven to 350 degrees; butter one 12-cup muffin tin and one 6-cup muffin tin.

2. In a large mixing bowl whisk together flour, sugar, baking powder, salt and nutmeg; set aside.

3. In a separate bowl whisk together eggs, melted butter and milk. Add liquid ingredients all at once to dry ingredients and stir just until well combined. Do not over-mix. Transfer batter to buttered tins and bake in preheated oven 18 minutes, or until puffed and golden brown.

4. Combine cinnamon and sugar for the topping and have melted butter ready as soon as the muffins are baked. Using a rubber spatula, gently nudge hot muffins from tins and brush immediately with melted butter, then while still hot, roll in cinnamon sugar.
