Maple Nut Brittle

Yields 2 pounds

 

1 cup water

2 cups sugar

1 cup corn syrup

2 cups raw nuts

1 teaspoon salt

2 tablespoons butter

1/2 teaspoon maple flavoring

1/4 teaspoon baking soda

1. Combine water, sugar and corn syrup. Cook to 240 degrees.

2. Add nuts and salt. Cook to 295 degrees.

3. Remove from heat. Add butter, maple flavoring and baking soda.

4. Pour onto a well buttered cookie sheet.

5. Turn when firm.

6. When cool, break into pieces.
