3 ounces cream cheese, softened 4 tablespoons orange juice 1/8 teaspoon salt 1 tablespoon butter 2 1/2 cups powdered sugar, sifted |

1. Soften the cream cheese with the juice. Add the salt and the butter. Gradually stir in the powdered sugar to a smooth consistency. Note: Add more sugar if the 2 1/2 cups is not enough; add more juice if the mixture is too thick. Add a little orange or yellow food coloring if you want to bring up the color. For serving, the cake can be covered with shredded coconut. |
