1. Preheat your oven to 350 degrees
2. Mix the dough: Make sure the butter is soft, then put it in a large bowl along with the sugar. Using the back of a large spoon or an electric mixer mash and scrap the butter against the side of the bowl while gradually adding the sugar until it becomes smooth and pale yellow.
3. Add the flour, rolled oats, baking soda, salt, nutmeg and vanilla. Mix these ingredients into the butter until it becomes one solid mass with no loose flour or rolled oats.
4. Grease two cookie sheets with butter or nonstick cooking spray. Scoop up 1 teaspoon of dough and roll gently with the palm of your hands to form a small ball. Place the balls about 2 inches apart onto the cookie sheets. Then lightly press the balls to flatten to 1/4 inch thick and round.
5. Place cookie sheets on center rack of oven and bake for about ten minutes. Cookies are done when you see just a little golden-brown color around the edges.
6. Remove the cookie sheet from the oven and let them cool for about ten minutes on the cookie sheet then transfer to a rack to cool for another ten minutes.
