Pecan Pie Squares

70 Squares

 

3 cups flour

1/4 cup plus 2 tablespoons sugar

3/4 cup butter or mararine, softened

3/4 teaspoon salt

Filling:

4 eggs, slightly beaten

1 1/2 cups sugar

1 1/2 cups Karo syrup, light or dark

3 tablespoons butter or margarine, melted

1 1/2 teaspoons vanilla

2 1/2 cups chopped pecans

1. Heat oven to 350 degrees. Grease jelly roll pan, 15 x 10 x 1 inches

2. Beat flour, sugar, butter and salt in large bowl on medium speed until crumbly. Press firmly in pan.

3. Bake until light golden brown, about 20 minutes.

4. Prepare filling. Mix all ingredients except pecans until well blended. Stir in pecans. Pour over baked layer, spread evenly. Bake until filling is set, about 25 minutes, cool. Cut into 1 1/2 inch squares. 70 squares.
