Pimento Corn Bread

Nonstick cooking spray

1 (8 1/2 oz) box corn muffin mix

1/3 cup milk

1 egg

2 tablespoons canned diced chilies

2 tablespoons chopped pimento


.

1. Spray an 8 inch square baking pan with cooking spray and set aside. Heat oven to 400 degrees.

2. Pour the muffin mix into a bowl. Lightly whisk together the milk and egg. Pour over the mix and stir well with a wooden spoon. Stir in the chilied and pimento.

3. Scrape into the prepared pan and bake 20 minutes. Cool slightly before cutting.
